Creamed Spinach

4 pounds fresh spinach - steamed
1-2 tbsp clarified butter
1/2 cup diced onion
1 tsp chopped garlic
2 1/2 cups heavy whipping cream
2 tsp kosher salt
1/8 tsp gound black pepper
1/8 tsp nutmeg
8 oz cream cheese, diced
1/4 cup grated parmesan cheese + 1 tbsp

drain spinach
saute onion and garlic 1 minute in butter
add cream, bring almost to boil
reduce heat, cook 6-8 minutes
stir in spices and spinach, when hot add cheeses
cook 20-25 minutes, stirring frequently
serve with last tbsp parmesan sprinkled on top
