1/2 cup olive oil
1 1/2 cups rice
3 small onions, chopped
4 cloves garlic, chopped
1 bunch parsley, chopped
juice of 4 lemons (3/4 C lemonjuice)
1 can tomato paste
1 pound ground beef
1 beef boullion cube
~1/2 tsp salt
~1/2 tsp pepper
1 jar grape leaves
1. Saute the ground beef with 1 chopped onion.
2. Prepare stuffing mix: Add together rice, 2 chopped onions, garlic, parsley, lemon juice, salt & pepper, 1/2 can tomato paste, the cooked groundbeef and 1/4 cup oil, stir well.
3. Remove leaves from jar, wash them thoroughly, drain and then cut heavy stems from leaves. Line pan with a few heavy leaves and set aside.
4. Place a leaf, rough side up and steam end near you. place ~1 teaspooon of rice mixture near stem end. fold over stem end, then sides. Roll tightly toward pointed end of leaf.
5. place rolled grape leaves, seamside down in pan. Pour the rest
of oil over it. mix and add 1 1/2 cups of boiling water, the rest of the tomato paste, and 1 boullion cube.
then place inverted plate on the grape leaves
Cover pan. Simmer as slowly
as possible till rice is tender. (45-60 minutes).
